Bakery Style Carrot Toast

Carrot Bread Toast is a quintessential Bangalore delicacy available at local "Iyengar" bakeries - the dish is a simple piece of toast topped with a spicy carrot masala!

Ingredients
  

  • 4 Carrots grated
  • 1 Onion finely chopped
  • 1 Green Chilli slit vertically
  • 1 sprig Curry Leaves
  • 1 tbsp Cooking Oil
  • 1 tsp Mustard Seeds
  • 1 tbsp Coriander Leaves finely chopped
  • 1/2 tsp Coriander Powder
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Red Chili Powder
  • Salt to taste

Instructions
 

  • Grate the carrots, finely chop the onions, slit the green chilli and finely chop the coriander leaves. Keep all the ingredients ready.
  • Place a pan on medium heat, add 1 tablespoon of cooking oil.
  • Once the oil is hot, add mustard seeds and allow it to crackle.
  • Next, add the curry leaves, green chillies and onions. Sauté until the onions are soft.
  • Add all the spices, mix well and add a tablespoon or two of water for the masalas to cook.
  • Next add the grated carrots, mix well. Adjust salt according to your taste.
  • Carrot takes less than two minutes to cook, once it looks soft, turn off the heat and garnish with coriander leaves. Your Carrot filling is ready.
  • Take a slice of bread and scoop 2-3 tablespoons of the carrot masala. Fill it to the edges.
  • Place a tawa on medium heat, add a pat of butter. Place the slice of bread with the carrot mixture on top of the butter.
    Allow for that side to toast while pressing the carrot masala into the bread.
  • Now, flip the bread to the carrot masala side and allow it to toast for 30 seconds.
  • Flip the carrot toast again and make sure the carrot stays on top of the bread. Repeat for the other slices of bread.
